Chilly Today, Hot Tamale!

I've officially added tamales to my cooking repertoire. 

 Step 1: Steam the husks.

 Step 2: Add lotsa masa.

 ...Not too much, just right.

 Step 3: Add the filling.

Step 4: Roll & Steam & Enjoy!

Who's coming over to try them??

What did you use as the filling?
My coworker and I just walked over to the Farmer's Market and they had wonderful smelling tamales there. He got a couple.
